LOW FAT FISH CAKES

This recipe was stolen from Table magazine. But I did change it a bit - I made it the lazy Kirsten way.

Ingredients

300g white fish fillets
300g tinned salmon
breadcrumbs
parsley
3 green onions
dill
2 eggwhites

Method

1. Whiz up fish in a food processor, until it resembles a paste. Put in a bowl.
2. Into same food processor, put some bread to make breadcrumbs. I used a stale wholemeal roll and a piece of multigran bread (i told you this was the lazy Kirsten way). Put breadcrumbs in bowl with fish.
3. Put roughly chopped green onions and a few sprigs of parsley and dill into the food processor.
4. Add to bowl.
5. Add eggwhites to bowl, and then mix.
6. Shape the mixture into patties.
7. Bake in oven on greaseproof paper (you don't need any oil!) at about 220 degrees C until they are golden. Turn over and repeat.
8. Enjoy!
