LEMON CHICKEN PASTA

This is actually supposed to be called "Chicken with Herbed Lemon Sauce" but that wouldn't fit in the title, and didn't actually mention the fact that it is mostly pasta. Possibly the word "pasta" isn't in the recipe title because it came from a pasta book. Whatever it is called, it is really easy to make, uses not many ingredients, and is also quite quick to make. And I think it is delicious!

Ingredients

350g pasta (but I normally just use the whole packet, since we are on a tight budget and you get more leftovers to freeze that way!)
1 teaspoon grated lemon rind
300mL cream (although lately I have been substituting a can of Light Evaporated Milk ("skinny tinny") because we are watching our weight not just our budget)
1 tablespoon fresh thyme
1/2 cup grated parmesan cheese
1/4 cup lemon juice
2 teaspoons chives
3 cups cooked chicken (although we just buy a bbq chook from Coles and break it up, we don't actually measure how much chicken there is)

Method

1. Cook pasta in large pan of boiling water, until just tender, drain. (I normally leave the pasta in the colander so I can use the same pan for the sauce, therefore less washing up!)

2. Heat a small amount of butter in pan, add rind and juice. Add cream, herbs, chicken, cheese and pasta. Stir until heated through.

What could be simpler? I promise, it is delicious
