1 clove garlic, crushed
2 onions, chopped finely
4 chicken breasts, cut into small cubes
300mL cream (can be normal or low fat)
2 teaspoons curry powder (or however much you want, really)
3 tablespoons chutney (I normally put a little extra)
Salt and pepper
1 tablespoon chopped parsley


1. Heat a little oil in a large pan, fry garlic and onions until soft
2. Add chicken and cook through
3. Mix in cream, curry powder and chutney, season with salt and pepper
4. Add chopped parsley
5. Serve with pasta or rice


Low Fat - Use a can of light evaporated milk instead of cream - much lower in fat (maybe not quite as yummy though - but pretty close!)

Coconut - Trina gave me this variation, and it is a great idea! Replace the cream with coconut cream. Yum!
