Baked BBQ Chicken Baked BBQ Chicken


This recipe is one that has been a favourite of mine for ages. I used to choose this when Mum would let us pick what we wanted for dinner on our birthdays :)


Chicken pieces (you can use breast or thigh fillets or any other type of chicken pieces you want. Vary the amount depending on how many people. We usually use thigh fillets and make about 2 per person)
1 Onion
1/2 cup brown sugar
1 cup tomato sauce
2 tablespoons Worchestershire sause
salt and pepper
60g butter (I leave this out usually though - the sauce isn't quite as thick but is a lot better for you!)
1 tablespoon vinegar
2 tablespoons lemon juice
1 tablespoon prepared mustard
1 cup water


Preheat oven to moderate. Brown chicken well in a pan with a little butter or oil. Put chicken in a casserole dish. Combine remaining ingredients in saucepan. Bring to the boil, and boil for 3 minutes. Pour sauce over chicken. Bake in a moderate oven for 1 hour (uncovered). Serve with rice.
